Feta Cheese Egg Scramble

Good Morning,

Just wanted to share a very simple but delicious breakfast recipe that I came up with this week..

I can almost guarantee you that once you make this, you will find yourself making it every day with just simple ingredient variations. As for this household, it will be a long time before I make normal (boring) scrambled eggs again.
                                                                           


Ingredients:

1 Tbsp Butter
2 Tbsp Diced Onion
1 Tbsp Minced Garlic

2 Eggs
Dash(es) Salt & Pepper
1 Cup unpacked Fresh Baby Spinach

Sprinkle of Cheese (Feta, Cheddar… or whatever you choose.)

Note: Ignore the cords in the back of the picture.  I am definitely not a professional photographer. :-)





Directions:

1) Melt the butter in a frying pan and add the onion and garlic to sauté it for about 2 minutes.

2) Crack the eggs right on top of the sautéed onions and garlic and then give the salt and pepper a good shake over the top of that. Let them cook for another 1-2 minutes (1/2 way done).

3) Add the spinach and let it cook until the eggs are done. Flip the eggs over a couple times and stir it around just a bit.


4) Melt the cheese on top and you're ready to eat! YummEEE!!!

As you can see it's a very simple recipe. Basically just adding a few ingredients and you have taken scrambled eggs to a whole new level. Your taste buds are really going to thank you for this one.

The sautéed garlic and onion add the ZING but surprisingly enough the spinach is really what takes these scrambled eggs to a whole new level (and makes the recipe somewhat healthy…). Seriously, taking a big bite of the spinach just makes my heart happy!

Now, let me insert the FUN part.

The cost per serving is probably less than .75 cents. The only ingredient that you can really factor would be the eggs. So, at $3/dozen, that's .50 cents for 2 eggs. The extra .25 cents covers "the dash of this and dash of that". This is definitely a very budget friendly recipe!
